Method
- Bloom the Gelatin
- Place the cold water in a small bowl and sprinkle the gelatin evenly over the top. Let it sit for about 5 minutes.
- Heat the Cream Mixture
- Add the heavy cream, milk, sugar, and salt to a saucepan. Heat over medium-low heat, stirring gently, until the sugar dissolves and the mixture is hot but not boiling.
- Add the Gelatin
- Remove the saucepan from the heat. Add the bloomed gelatin and whisk until fully dissolved.
- Add Vanilla
- Stir in the vanilla extract.
- Pour Into Glasses
- Divide the mixture evenly among 6 dessert glasses or ramekins.
- Chill
- Refrigerate for at least 4 hours, or until fully set.
- Make the Strawberry Sauce
- Add the strawberries, sugar, and lemon juice to a small saucepan. Cook over medium heat until the berries soften and release their juices.
- Blend the Sauce
- Blend the strawberry mixture until smooth. Strain if you want a finer texture. Let it cool completely.
- Assemble
- Spoon the cooled strawberry sauce over the chilled panna cotta.
- Garnish and Serve
- Top with fresh strawberries, mint, and a chocolate wafer if desired, then serve chilled.
Notes
For the smoothest texture, avoid boiling the cream mixture after adding the gelatin. Let the panna cotta chill fully before adding the strawberry sauce. Keep the dessert refrigerated until serving, and add the fresh garnish just before serving for the best appearance.
