Ingredients

  • Lobster
  • - 2 lobster tails about 5–6 oz each
  • - 1 tablespoon olive oil
  • - 2 tablespoons unsalted butter
  • - 2 garlic cloves minced
  • - 1 tablespoon fresh lemon juice
  • - 1/4 teaspoon salt
  • - 1/4 teaspoon black pepper
  • Orzo
  • - 1 cup orzo pasta
  • - 2 cups seafood stock or chicken broth
  • - 1 tablespoon unsalted butter
  • - 1/3 cup heavy cream
  • - 1/3 cup grated Parmesan cheese
  • - 1 teaspoon lemon zest
  • - 2 tablespoons chopped fresh parsley
  • - Salt and black pepper to taste
  • Optional Garnish
  • - Fresh parsley
  • - Lemon wedges
  • - Extra grated Parmesan

Equipment

  • 1 Large skillet or sauté pan
  • 1 medium saucepan
  • 1 Large pot
  • 1 Chef’s knife
  • 1 Cutting board
  • 1 wooden spoon or spatula
  • 1 set of measuring cups and spoons
  • 1 pair of kitchen tongs
  • 1 serving platter or large plate

Method

  1. Prepare the Lobster
  2. Pat the lobster tails dry. Season lightly with salt and black pepper.
  3. Cook the Lobster
  4. Heat the olive oil and 1 tablespoon of butter in a skillet over medium heat. Add the lobster tails and cook until the meat is opaque and cooked through. Remove from the pan and set aside.
  5. Make the Garlic Butter
  6. In the same skillet, add the remaining butter and minced garlic. Cook briefly until fragrant, then stir in the lemon juice.
  7. Cook the Orzo
  8. Add the orzo to a saucepan with the seafood stock or chicken broth. Cook over medium heat, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.
  9. Make It Creamy
  10. Stir in the heavy cream, Parmesan, lemon zest, and parsley. Season with salt and black pepper to taste.
  11. Prepare the Lobster Meat
  12. Remove the lobster meat from the shells and cut it into large pieces, leaving some portions whole for presentation if desired.
  13. Combine
  14. Fold part of the lobster meat gently into the creamy orzo.
  15. Serve
  16. Spoon the orzo onto plates or a serving platter, top with the remaining lobster, and garnish with parsley, lemon wedges, or extra Parmesan if desired.

Notes

For the best texture, avoid overcooking the lobster, since it can become tough quickly. Keep the orzo creamy by stirring it regularly and serving it soon after cooking. If the mixture thickens too much, add a small splash of warm broth before serving.
